Our history

Our company history begins in 1976 on the shores of Lake Albano, Castel Gandolfo, on the outskirts of Rome, where we started selecting Italian regional specialties, in particular the ones of Latium, and distributing cold cuts, ripened cheeses and cod of great gastronomic value to specialized delicatessens and restaurants.

For over 45 years, we have been pursuing the philosophy of “good and healthy”, entrusting the processing to the expert hands of highly skilled artisans under our strict control.

A true culture made of deep knowledge of the territory, of the product and of its technical preparation, is the key element beyond our selection of raw materials.

Our gastronomic selection collects the real heritage of Italy’s different regional gastronomies revisited in a modern key and, while preserving the flavors and the memory of tradition, it takes into account new production methods. Since the very beginning, our aim is to improve dietary intake.

#3 Salt reduction in the Roman cuisine

Cibaria offers unique, highly digestible and low salinity products, such as the San Rocco seasoned guanciale – less than 2.5% salinity – and the Pecorino Romano DOP Cibaria Selection, a mild cheese with a delicate spicy vein – less than 4% salinity.

Our cold cuts, cheeses and cod, handcrafted with attention to the smallest details, give immense opportunities to chefs to enhance their dishes, and to specialized delicatessens to retain their customers.
