Product description
The Bassiano Coppiette are made of selected national pork loin only.
The Coppiette are strips of dried pork meat, artfully flavored with salt, wine, chili pepper and fennel seeds. The meat used to create the Coppiette is taken from porks born, reared and slaughtered in Italy, and from which only the finest loin cuts are selected. After trimming and eliminating the fatty parts, the meat is cut into strips homogeneous in length and thickness.
After being left to rest at low temperatures, and before proceeding to the drying phase, the meats are tanned with salt, spices and wild fennel seeds (and chilli, in the spicy version). The strips gradually lose weight, until they reach the right balance of consistency and expressivity in aroma and taste.

The territory
Bassiano is a historic site in the Lepini Mountains, ideal for the production and aging of cured meats, and famous for its pure and fresh air that naturally joins the humid components responsible for the softness and complexity of the products.
It is in this territory, made unique by its microclimate, that the Reggiani company has been able to create the Norcino butchery style, based on artisanship, tradition and healthiness.
Tasting

History and curiosities
Their use in taverns or fraschette (a kind of Italian tavern where the Novello wine was served), was particularly widespread to accompany and facilitate drinking, given the intensity of the spices and chili peppers. The Coppiette (literally โlittle couplesโ), were tied in pairs, hence their name, and left hanging to dry.
Reggiani offers an excellent version of the Coppiette, made from fine selections of fresh and expertly processed meat.
Pairing
A typically appetizer salami, perfect for gourmet platters that can accompany informal snacks of all kinds.
Its best match is with dry and fresh white wines such as Frascati and Passerina, but it also pairs very well with more lively and sparkling wines.
