Product description

The Guanciale di Bassiano, aged naturally for over three months, is characterized by its simple and allergen-free ingredients: salt, wine, pepper, chilli pepper and natural flavors.

This Guanciale is made of porks born, reared and slaughtered in Italy; their jowl meat is trimmed, massaged and salted for the maturation period.

After being externally seasoned with ground black pepper, the aging phase begins. During this important phase the Guanciale is left to air dry in open-window spaces, where it acquires the unmistakable scent of the surrounding woods.

The territory

Bassiano is a historic site in the Lepini Mountains, ideal for the production and aging of cured meats, and famous for its pure and fresh air that naturally joins the humid components responsible for the softness and complexity of the products.

It is in this territory, made unique by its microclimate, that the Reggiani company has been able to create the Norcino butchery style, based on craftsmanship, tradition and healthiness.

Tasting

The exclusive beechwood-smoked version of our Guanciale, thanks to its delicate smoked wood notes, gives an extra boost to the flavors of the typical Roman cuisine recipes.

While slicing the Classic version of the Guanciale, spice fragrances and scents are immediately unleashed, creating a perfect balance between the lean and fat parts. Consistency and softness harmoniously bind with a broad and lasting taste.

The Bassiano Reggiani Guanciale is the main ingredient of some of the best first courses of the traditional Roman cuisine such as carbonara, gricia or amatriciana.
If finely sliced, it can enrich various appetizers, both raw and grilled; ideal for harnessing roasted meats, it can give a great boost to savory fillings and rustic pies.
According to its recipe and use, this unique product is perfect when combined with well-structured white wines, such as Malvasia or Bellone.
